An Ji Bai Cha, or An Ji White Tea (in English) is so named because its unprocessed tea leaves are almost completely white in color. The tea itself is actually a green tea. There was a legend recorded in an ancient 900-year old Chinese book called "Da Guan Cha Lun" about a tea plant with jade white leaves. It remained a legend until 1980s, when a single white tea bush (now known as the Ancestor of Bai Cha) was found in An Ji County (Zhejiang province, China), and experts believe that this was the tea plant that was mentioned in the book. It was soon cultivated for commercial purposes – An Ji Bai Cha is one of the teas processed from the leaves picked from these tea plants. The picking season is very short, around 30 days in early spring season as once the temperature increases, the leaves would start to turn green.

Research found that the tea plant has low chlorophyll and polyphenols content (which explains the whitish-green tea leaves) but is very rich in amino acids. It has almost twice the amount comparing to other green teas. Amino acid helps suppress cortisol and reduces stress.

An Ji Bai Cha harvest area is now a protected. Only the leaves picked within destinated area can be considered as An Ji Bai Cha. This tea is certified organic by China Organic Product.

Other names:

An Ji White Tea, White Jade Phoenix Tea (Yu Feng Cha)

The taste is refreshingly delicate and soothing, with a slight hint of orchid sweetness in its aroma. It is very important that the temperature of the water used for steeping this tea should never exceed 80 degrees Celsius. As with all other green teas, use 75°c - 85°c to bring the best out of this tea.

The tea leaves of An Ji Bai Cha have one of the freshest appearances of any teas. The leaf patterns are still visible. Once infused, the tea leaves starts to turn whitish-green in color and unfurl into one-bud-one-leaf form.

Brewing Guide

1. Rinse tea cup and teapot with hot water.

2. Use about 3 grams of tea leaves (1-2 teaspoons) for every 150ml of water. Steep tea leaves in hot water at 75°c (158°F) to 85°c (176°F) for 1 minute for the first and second brewing.

3. Gradually increase steeping time and temperature for subsequent brewing.

* We suggest you to use porcelain tea ware.

Extremely refreshing. There is not as much roasting flavor as good quality Long Jing teas, but it is an excellent tea. There is much more floral/grassy notes to this tea. A must try! I prefer it to Long Jing for the afternoon. Recommended ++.

One of the best cups of tea I've enjoyed in a long long time! Too bad I'm developing a taste for one of the more expensive teas offered... Nevertheless, this tea was everything I imagined it would be when I first ordered it. I received the smallest amount I could buy, figuring to sample it a bit and move one; but within a couple of sips I was completely entranced by the experience! I will most definitely purchase much more of this one. It has an entirely civilized effect on the palate and leaves a clean and refreshing aftertaste. If I were endeavoring to introduce someone to the new experience of exotic Chinese teas, this would be probably rank as my first choice; it is sufficiently different from your basic Chinese restaurant experience to demonstrate why someone would pay more for an ounce of tea than for a complete dinner for two PLUS tea at most eateries. Almost anyone would get (ie., taste) the point. (I steeped a small amount in a glass French press and made about a cup using hot

An elegant, light, and sweet tasting green tea. The orchid aroma is apparent but discreet and lovely. The tea is similar to a Gu Zhu Zi Sun green tea but is more gentle and lush sans grassy strident notes. The freshest green tea leaves I have ever encountered. One of the most interesting and intriguing green teas I have ever ordered from ChineseTeaArt. Highly recommended! Great product!!!

I can't get over how great this tea is. This tea has become a daily staple. Quite subtle, no hint of bitterness. I can't find it in my heart to criticize this tea. If you haven't tried it yet, you need to. Yes, it is more expensive than other greens, but it is well worth the price.

Has very nice aroma but taste seems to be not as strong as previous years. Need more tea leaves to produce the same strength.
