This is probably the most famous of all Chinese Oolong teas. The name Tie Guan Yin means "Iron Goddess of Mercy" and the tea is as magnificent as its name implies. There are many legends surrounding the origin of its name and one of it tells the story of a kind-hearted but poor farmer named Wei Yin. Despite working hard every day to make a living, Wei Yin would spend his free time tending an abandoned Guan Yin (Goddess of Mercy) temple he found near his place. One day, he fell asleep in the temple and dreamed about the Goddess telling him to look for a cave behind the temple. There, he found a single tea shoot where he took home and planted it in an iron pot. Slowly, it grew into a tea bush with exceptional quality tea leaves. Wei then gave cuttings to his neighbors and friends to grow. The County soon prospered due to the popularity of the tea. Tie Guan Yin can now be found in the menu of most Chinese restaurants throughout the world.

"Te Ji" means special grade. The quality of Te Ji Tie Guan Yin tea is said to be derived from the combination of "Heaven, Earth and Man". Heaven refers to the weather, as high grade Tie Guan Yin can only be cultivated when the weather is ideal. Earth is the soil and elevation, where elevated, rich and unpolluted grounds are desirable. And finally Man is the tea master who processes the tea. A skilled and experienced tea master is essential to produce the best Tie Guan Yin. Te Ji Tie Guan Yin is the result of the perfection of these three requirements. Such perfect Tie Guan Yin is extremely rare and usually reserved only for local VIPs and State guests.

Brewing Guide

1. Rinse tea cup and teapot with hot water.

2. Fill the teapot 1/2 to 3/4 full with tea leaves, or 3 grams of tea leaves for every 150ml of water if you are not using purple clay. Steep tea leaves in hot water at 95°c (207°F) to 100°c (212°F) for 1 minute for the first and second brewing.

3. Gradually increase steeping time and temperature for subsequent brewing.

* We suggest you can purple clay or porcelain tea ware.

This is the best TGY that i have ever tried. The first infusion is so heavenly that the flavors of TGY lingers in you mouth after you drank it. Price wise is a little steep but definitely worth trying. Used 3g leafs in 100-120ml of boiling water, this TGY is able to last me for about 5 infusions. this is the one TGY along with Jade TGY that i will definitely purchase again from ChineseTeaArt.

The aftertaste is fresh and very pleasant. It seems to be less "oily" than many other Tie Guan Yin. If you had a poor Tie Guan Yin last time you should go for this one. It will show you a field of flowers and vegetables - always fresh and light, never oily and flat.

It is great TGY, and what makes it better than others, the answer only comes when you brew it the right way Chao Zhou Gong fu style, no faircup, use maximum heat and shower the teapot, it has intoxicating aroma that lasts 7 infusions, it fills your breath much more obviously than other teas. This one is one of the highest quality of TGY, so buy it with confidence if you have enough experience to make it right.

I just spent 15 minutes doing a review and it was not accepted - so it says anyway. Chinese Tea Art Teas are incredible. I have a giant problem receiving my orders from them. I don't know what I'm going to get from order to order. They have or had a Tie Guan Yin called = "1725 - - The Classic Royal Gift Chinese Tea "- This is INCREDIBLE TIE GUAN YIN and I've had alot of it. Nothing beats what I received. I just don't know if I'll ever get this same thing again and waiting 16 weeks for somthing after its paid for, plus to find out through tracking the first order was reurned to China and not being told by the company, was just a tad harrowing. After that long with no feedback has nothing to do with being patient. Anyway, all the Teas I've tried are excellent. But good luck. I so wished I knew for sure if I could get the same Tea = Brand and packaging and quality.
